A Sweet and Simple Dessert: Strawberry Shortcake

Recipe for Strawberry Shortcake:

  • 1/2 cup milk

Instructions:

  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

  3. Add the chilled, cubed butter to the bowl and use a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.

  4. In a separate bowl, whisk together the milk, eggs, and vanilla extract.

  5. Add the wet ingredients to the dry ingredients and mix until just combined.

  6. Using a 1/4-cup measure, scoop the batter onto the prepared baking sheet, spacing them about 2 inches apart.

  7. Bake the cakes for 15-18 minutes, or until they are lightly golden brown.

  8. While the cakes are baking, prepare the strawberry topping. In a medium bowl, combine the sliced strawberries, sugar, and lemon juice. Toss to combine and set aside.

  9. In another bowl, prepare the whipped cream. Using an electric mixer, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.

  10. To assemble the strawberry shortcakes, slice the cakes in half horizontally. Place the bottom half of each cake on a plate.

  11. Top the cakes with a spoonful of the strawberry topping and a dollop of whipped cream.

  12. Place the top half of the cake on top of the whipped cream and add another spoonful of strawberry topping and whipped cream.

  13. Serve the strawberry shortcakes immediately.
